Kadhai Chicken

Kadhai chicken, is a dish from the Indian subcontinent noted for its spicy taste; it is notable in Pakistani and North Indian cuisine. The Pakistani version does not have capsicum or onions whereas the North Indian version uses capsicum. The dish is prepared in a karahi (wok). It can take between 30 and 50 minutes to prepare and cook the dish and can be stored for later consumption. It can be served with naan, roti or rice. This dish is one of the hallmarks of Indian and Pakistani cuisine. Lets check out its recipie:-


Ingredients:-

For the Kadhai masala:-

Red chilli-2 to 3 nos
Coriander seeds- 1tbsp
Cumin seeds-1tbsp
Whole Black Peppercorns- 10 to 12 nos
Fennel seeds-1 tbsp

For the gravy:-

Chicken-750gm
Onions-2 medium sized cut into petals
Red bell pepper-1 cut into cubes
Capsicum-1 cut into cubes
Curd-1/2cup
Ginger garlic paste-4tbsp
Tomatoes- 2 chopped into fine cubes
Red chilli powder-2tsp
Cumin powder-1tbsp
Coriander powder-1tbsp
Turmeric powder-1/2tsp
Garam masala-1tsp
Water-1/4th cup
Fresh cream-2tbsp
Salt to taste
Ghee for frying

Procedure:-

Dry roast all the kadhai masala for 5 minutes and set aside to let it cool.
Let them cool down and grind into a fine powder.
Meanwhile, marinate the chicken with 1tsp red chilli powder and 1tbsp ginger garlic paste and a pinch of salt and let it rest for 1 hour.
After 1 hour, heat kadhai well and add ghee.
Add the chicken into it and fry for 10 minutes on medium low flame.
Add the remaining ginger garlic paste and fry for 2 minutes.
Add turmeric powder,red chilli powder,coriander powder,cumin powder,salt and kadhai masala and fry for 5 minutes.
Add tomatoes into it and mix.
Add water and let it bubble for  minutes on medium flame so that the tomatoes cooked well.
After 5 minutes lower the flame and add curd and stir on medium flame untill ghee separates.
Add cream into it and mix well.
Add red bell pepper and green bell pepper and onions and cook for 5 minutes by covering completely.
After 5 minutes our kadhai chicken is ready.
Serve with roti,paratha or rice.
