Kadhai Paneer

Kadhai Paneer is called so because
the whole dish is prepared in karahi or kadhai.

There are two version of Kadhai paneer one is restaurant style and one is spiced version. Kadhai paneer is nothing but cottage chesse which are cooked in tomato gravy with Kadhai Masala.
Ingredients:-
For the Kadhai Masala:-
Coriander seeds:- 2tbsp
Cumin seeds-1tsp
Kashmiri red chilli-5 to 6
Green Cardamoms-2 to 3
Black Cardamom-1
Cinnamon sticks-1pc of 1 inch
Bay leaf-2nos
Black Pepper Corns:-3nos
For the Curry:-
Paneer-250gm
Onions-2medium sized finely chopped
Ginger-2 inch pcs cut intohalves
Garlic-5 to 6 cloves
Tomatoes-2 small sized roughly chopped
Capsicum-2 medium sized cut into cubes
Tomatoes-2 small sized roughly chopped
Capsicum-2 medium sized cut into cubes
Turmeric powder-1tsp
Red chilli powder-1tsp
Kasturi Methi-1tsp
Cream-1tbsp
Cream-1tbsp
Coriander leaves-1tbsp chopped(for garnishing)
Oil as required
Salt to taste
Procedure:-
Dry roast all the kadhai masala for 5 minutes on low flame.
Keep aside and let it cool down.
Grind into fine powder and keep aside.
In a kadhai add oil and add ginger garlic onions and tomato and fry them untill they softened. This will take a minute or two.
After 2 minutes switch off the flame and keep aside to let it cool.
After that grind it into a fine paste.
Again add oil and add kasturi methi into it.
Add turmeric powder and red chilli powder and stir well for 2 minutes on low flame
Add capsicum and stir for 2 minutes.
Add the puree and kadhai masala which we prepared earlier and stir untill it starts releasing oil.
Add water and mix well.
Let it bubble on medium heat for 5-10 minutes.
Adjust salt into it.
Add paneer cubes and stir well.
Add cream into it.
Stir well.
Garnish with chopped coriander and cream.
Serve with poori,laccha paratha,kulcha or rice of your choice.
Serve Hot.
