Chicken Cutlets

Before we begin lets describe what are cutlets?
In Indian cuisine, a cutlet specifically refers to mashed vegetables (potato, carrot, beans) or cooked meat (mutton, beef, fish or chicken) stuffing that is fried with a batter/covering. The meat itself is cooked with spices - onion, cardamom, cloves, cinnamoncoriander(cilantro), green chillies, lemon and salt. This is then dipped in an egg mix or Corn starchand then in Bread crumbs (also see breaded cutlet), and fried in ghee or vegetable oil. Mostly chicken and mutton cutlets are very popular snacks in the city of Kolkata.
The vegetarian version has no meat in it, instead the filling is a combination of mashed potatoes, onion, green chillies, spices and salt, cooked for a bit together. This version is more popular with the vegetarian Indian population such as aloo tikki,corn tikki etc. Lets start the recipie of Chicken Cutlets.

Ingredients:-

Chicken keema-350gm
Mint leaves-1tbsp
Coriander leaves-1tbsp
Parsley-1tbsp
Kashmiri red chilli powder-1tsp
Black pepper powder-1/4th tsp
Lime juice-1tbsp
Msg-1/4th tsp
Ginger garlic paste-2tbsp
Salt to taste
Eggs-3
Bread crumbs-2cups
Oil for frying.



Procedure:-

In a big bowl marinate the chicken with all the ingredients except eggs,bread crumbs and oil and keep it aside.
Chill it for a minimum of 1 hour for easy shaping.
In a bowl whisk eggs and add in a pinch of black pepper powder and salt and mix well.
In a plate spread bread crumbs.
Take out the marinated chicken and divide into equal portions.
Roll it using hands and shape it as you like.
Coat with bread crumbs.
Drip off excess bread crumbs.
Heat oil well in a kadhai.
Lower into hot oil and fry on medium flame untill golden brown and crispy.
Serve hot with chilli sauce or tomato sauce or with any sauce you like.
