Gujiya....Today's recipie is delicious gujiyas as everybody knows that Holi is around the corner so everybody will be thinking about its preparations. So let me share you what is Gujia?
Gujia is a deep fried pastry filled with mava or khoya. It is generally made during Holi Festival but apart from that its also made during Diwali and its mainly famous in North India.. So lets check its recipie
Ingredients:-
(For the Filling)
Wheat flour-1cup
All purpose flour-1cup
Salt-1/3rd tsp
Ghee-4tbsp
Lukewarm water- as required while kneading
(For the Stuffing)
Khoya-250gms
Chopped dry fruits-1/2cup
(I have taken cashews,almonds,pistachios and kismis)
Ghee-1tsp
Powdered sugar-1/4th cup or 4tbsp
Cardamom powder-1/2tsp
Oil for frying the gujiyas
Procedure:-
Firstly take a big bowl and mix all the dry ingredients well. Add ghee and mix untill it forms a bread crumbs like texture. Gradually add water and knead a firm dough and rest it by covering it with a damn cloth for 30 minutes.
Meanwhile lets prepare the stuffing
For the stuffing grate the khoya and keep aside
Take a pan add ghee. Let it melt and then add grated khoya or mawa and stir continuosly on low flame till it melts and gather together and then switch off the flame. Let the khoya cool down completely.
Now add dry fruits, sugar and cardamom powder and mix well.
Now comes the fun part
The Filling:-
Divide the dough into two portions. Make a medium size log and divide it into equal portions.
This much quantity of flour will yeild 13-14 gujiyas.
Now roll each dough ball with 4-5inches diametre and fill 1tbsp of khoya mixture in centre keeping the edges empty.
Water the edges carefully and then join both the edges and seal properly. Shape the gujiyas by rolling the edges. Like this prepare other gujiyas.
Baking mehod of Gujias:-
Preheat the oven to 200°C/390°F
Place the gujiyas in a baking tray and brush with butter or ghee and bake it for 20-30 minutes untill golden brown
(Oven temperature may vary so cgeck in between)
Frying method of Gujias
Heat oil in a deep bottom kadhai or pan.
Check the oil by dropping a dough because oil temperature is very much important while frying the gujias. If the dough comes out immediately your oil is ready. If its sits down that means oil needs to be hot for some more time.
Fry the gujias two at a time don't overcrowd the pan.
Flip them carefully abd fry them untill golden brown.
Drain them over tissue paper to absorb extra water.
Store them in an airtight container and enjoy upto months..
