Vanilla Cake Sponge..

Vanilla cake is the main base of any cakes other than chocolate cake. 
You can bake this cake and use with any frosting of your like.
This cake goes good with vanilla buttercream frosting, strawberry frosting, white forest forest frosting and so on. 
This particular Recipie which I am gonna share with you will surely melt in your mouth and will stay soft even after you refrigerate it.
Lets check its recipie:-



Ingredients:-

All purpose flour -1cup
Powdered sugar-1cup
Eggs-4
Baking powder-1tsp
Soda water-1/3 cup
Oil-2tbsp
Vanilla essence:-1tsp
Salt- a pinch

Cocoa powder-1/2 cup
Eggs-4
Baking powder-1tsp
Soda water-1/3 cup
Oil-2tbsp
Salt- a pinch

Procedure:-

In a big bowl, place a seive.
Add in all purpose flour,salt and baking powder and seive them verywell.
Keep it aside.
Take another bowl and separate egg whites and egg yolks.
Beat egg whites on medium speed for 10 minutes untill they reach cream like texture.
When u see your egg whites reaching that state stop beating.
Add powdered sugar to the egg yolks gradually and mix.
When mix is done add it to the egg whites mixture and mix in cut and fold technique so that the air in the egg whites does not break and it remains flufffy.
Add the cake premix which we mixed earlier and again mix carefully in cut and fold technique.
Add in soda water, oil and vanilla essence and mix well.
Line a cake with parchment paper and butter or oil.
Add in the batter to it.
Tap it.
And bake in a preheated oven at 180°C for 20-30 minutes or more untill a tooth poc is inserted and it comes out clean.

Alternative baking options:-

1) Microwave for 10 minutes on full         powder untill the cake bakes completely.
2) Preheat a patila or pressure cooker for 10 minutes on medium flame and bake it on medium low flame for 30-40 minutes or more untill a toothpick is inserted and it comes out clean.

Note:- Make sure that you remove the gas cake and the weight in case you are baking in cooker.
If using patila make sure that the lid is completely closed so that no air can goes in. If air goes in then your cake will not cook properly.

After 30 minutes take out the cake. 
Let it cool down and then cut into desired slices or you can frost it as per your wish.
